Chef Brad’s Vinegar and Mustard BBQ Sauce

Wednesday, June 1st, 2011

So many examples trying for the perfect barbecue sauce recipe are based on molasses and ketchup, particularly those that originate from the mid west and southwest of the nation. This recipe, however, is for a barbecue sauce with mustard and vinegar as its base. It combines tang and sweetness with a hint of a kick for a great bbq chicken recipe, or for a sauce that will bring out incredible that the entire family can enjoy on those warm summer evenings.

This recipe produces about  2 1/4 cups of barbecue sauce. Allow 15 minutes for preparation, 30 minutes of cooking time, for a total production time of 45 minutes.

Ingredients Required:

Water: 1/4 cup
Chili powder: 2 tbsp (tablespoons)
Yellow mustard: 1 cup
Black pepper: 1 tsp (teaspoon)
Cider vinegar: 3/4 cup
White pepper: 1 tsp (teaspoons)
Sugar: 1/2 cup
Butter: 2 tbsp (tablespoons)
Brown sugar: 1/4 cup
Cayenne pepper: 1/4 tsp (teaspoon)
Hickory flavored liquid smoke: 1 tbsp (tablespoon)

Soy sauce: 1/2 tsp (teaspoon)

Cooking Directions:

Step 1 - With the burner set at medium heat, mix all of the following ingredients together in a large saucepan: the water, cider vinegar, chili powder, yellow mustard, black pepper, regular sugar, brown sugar, white pepper, and cayenne pepper. Be sure you set aside the other ingredients for the time being; the butter, liquid smoke, and soy will be added later.

Special note: As with any barbecue sauce recipe with extra spices in it, this one can be a tad spicy for kids.  If children will be enjoying this meal also, cut the amounts of cayenne powder and chili powder down to a pinch of each so the sauce does not have too much kick for kids to appreciate.

Step 2 - Having mixed the initial ingredients at medium heat, reduce the heat to low and allow the sauce 30 minutes to simmer.

Step 3 - Now add in the remaining ingredients by stirring them in slowly and give the sauce another 10 minutes of simmering.

After the final simmering, the sauce is ready to be basted on your meat of choice for immediate enjoyment or refrigeration to enjoy at a later time.  This sauce also works great with many bbq chicken recipes, go experiment and find the best one to your liking.
